Today's Google Doodle Celebrates Chilaquiles: The Ultimate Breakfast Delight
Today's Google Doodle is a food lover's dream. It celebrates one of my all-time favorite breakfast dishes, the delectable chilaquiles, which I’ve enjoyed not once, but twice this week.
Google commissioned Oakland-based guest artist Chava Oropesa to create the Doodle.
Chilaquiles are a simple yet versatile dish. At its core, all you need are fried tortilla strips or chips, enchilada sauce, cheese, and a fried egg or two. Simply cover the chips with enchilada sauce and cheese, heat it up, top with eggs, and enjoy. It's easy, quick, and delicious!
As with all Mexican dishes, the style of chilaquiles you’ll encounter in Mexico varies by region.
You can customize chilaquiles with avocado, guacamole, salsa, cotija cheese, melted queso, jalapeños, or whatever your heart (or stomach) desires, including slow-cooked pork or chicken. For a creative twist, you might even consider making a green chile gravy and creating a hybrid biscuits and gravy chilaquiles, perhaps using corn muffins instead.
My point is, if you haven't tried chilaquiles before, now's the perfect time to do so. You can choose between red or green enchilada sauce; canned is perfectly acceptable, but if you're feeling ambitious, you can make it from scratch. Just be careful not to overcook the eggs—you want the yolks to be nice and runny. Another great tip is to make your own tortillas. Use some for tacos at dinner, and fry up the leftovers for a delicious breakfast the next day.
